| One key element determining bread's character is the oven used to bake it. Wood fire ovens for example give their loaves a rustic character. Wood oven baking involves considerable skill and expense. Instead of setting a thermostat to bring the oven to the desired temperature, as a home baker does, bakers must learn how to achieve the temperature they need by manipulating the amount and placement of wood. Their ovens contain probes that indicate the temperature in various spots, but such ovens are erratic and uneven, demanding the baker's full attention. When the oven reaches the appropriate temperature, the coals are swept out and the loaves go in. |
